I’ve never been much of a morning person. I typically wait until the last possible moment to jump out of bed, take a quick shower and toss on some clothes. I don’t even take the time to put on any makeup, except for some simple foundation and blush. My routine rarely leaves time for breakfast, which means my stomach is growling about an hour into my day. This can be really embarrassing in a small class or a business meeting, not to mention the fact that I find myself constantly yawning. I’m sure my co-workers think that I am either bored or possibly stayed out too late partying. In any case, I wasn’t making a good impression, so I decided to make a change. Since I didn’t want to give up any sleep in the morning, I looked into some quick and easy breakfast choices that would help satisfy my appetite and give me the fuel I needed to have a productive day. Over time, these yummy dishes have earned a place on my morning menu.
Say ‘Yes!’ to Smoothies
Smoothies are quick, easy and travel well. Some of my favorites include the PBO (peanut butter, banana and oatmeal), an Orange Julius copycat and mango, which is super simple. Here’s the recipe:
• 8 oz. white grape juice
• 2 cups of frozen mango
• 1 serving of Yoplait vanilla yogurt
• 1 banana (I like mine more green than ripe)
Simply toss everything in the blender and you are done! You can add more mango or juice, depending on how thick you like your smoothies.
Head for the Border With Breakfast Burritos
You can make these fresh, but I like to cook them over the weekend and wrap them up for a quick treat in the mornings. The basic ingredients you will need are tortillas, eggs and shredded cheese. Change things up by adding in sausage, bacon, onion, peppers or other vegetables. Once you have them assembled, simply tuck and roll them. To keep them fresh, wrap your burritos in some plastic wrap and write the date on them (I use stickers, but masking tape works, too). In the morning, all you have to do is toss it in the microwave for about 45 seconds and you are good to go!
Go Bananas!
I love bananas because they are so versatile. In the summer, nothing is better than a cool treat on a steamy morning, so I roll my bananas in Greek yogurt, cover them with almonds and cinnamon, insert a stick and freeze them. By the morning, I have a delicious snack to eat in the car on the way to class. You can also use tortillas and peanut butter (or another favorite spread like Nutella or jelly) to create a yummy banana roll-up. Of course, my go-to meal is simply a bagel (or English muffin) with peanut butter, honey and sliced bananas. Delicious!
Try These Egg-citing Meals
Eggs are cheap and easy to cook. If you are in a dormitory and only have a microwave, you can make a delicious omelet or some scrambled eggs using a large coffee mug or soup bowl. Add in some seasoning, cheese or whatever you have handy; in under three minutes you will have breakfast. I like a little more substance to my eggs, so one of my favorite ways to fix them is over easy, nestled on top of an English muffin and smothered with cheddar cheese. For an extra boost, I sometimes add a sliced apple, too. If you have some extra time in the morning, you may want to try making a breakfast pizza. Most people use actual pizza dough and top it with scrambled eggs, bacon (or sausage) and cheese. It takes about 15 minutes to cook, but it’s worth the wait. I also enjoy using Pillsbury crescent rolls instead, rolling the ingredients inside for easy transportation.
Since I added breakfast into my routine, I find I have more energy and I’ve actually lost some weight. I no longer catch myself yawning throughout the day and I am not as hungry when I get home in the evenings. Breakfast truly is one of the most important meals of the day, so make sure you grab something before you head out each day. Your stomach and your co-workers will thank you for it!
